I first made this recipe for Lime Roasted Zucchini and Shallots back in 2012. Years later it’s still just as delicious! Zucchini is in prime season and it’s one of my favorite vegetables. So much in fact, I usually make it weekly in our dinner rotation. What are shallots? Shallots are in the onion family, yet have a more delicate, sweet flavor.

I just love mushrooms so I’m always finding a new way to make them stuffed or sautéed.
