And while my love of barbecue sauce started there, it has since become a staple in my vegetarian cooking. Here, I’ve paired my love of barbecue with the vegetarian ingredient I think is most meat-like: tempeh. The fermentation that tempeh undergoes helps create a texture that provides a toothsome bite, different from what tofu provides.
