We giggle that her version really isn’t Borscht (the classic Russian beet soup), but more of a delicious veggie soup spiked with dill making it taste Borscht-like but without the beets. Borscht is an age-old Ukrainian dish made in the kitchens of any former republic that ever belonged to USSR, including Bessarabia, where my paternal roots are.
