Chef’s Table spoke with Ritzco about the Upvalley eatery that she runs with her son, Aaron Stafursky.

Clotter, who owns One Stop Pasta Shop inside the Marketplace at Steamtown, 300 Lackawanna Ave., was inspired to allow customers to create their own pasta dishes. They can choose from either Penne and Cavatappi pasta as their base and add vegetables, sauces and proteins such as chicken, meatballs and shrimp, to customize their own creations.
