La popolarità di questa spezia (dal caratteristico odore e sapore pungente “di limone piccante” perché contiene olio essenziale e i caratteristici gingeroli che si degradano in shogaoli) risale alla tradizione culinaria e medicinale asiatica dove è adoperata da oltre 5000 anni, specie in India e Cina.
