Rhubarb season is such a short one, it starts to appear in April and reaches its peak in June — as long as we have rain. During that time, I love to make as many rhubarb foods as I can. The recipe that follows is one that I make year after year. This recipe is what I would call the “fig newton” type of rhubarb bar. I guess that is kind of what it reminds me of.
