Driving just an hour to the east, we enter the Alentejo region of Portugal. We exit the highway and explore, meandering backroads. We pass cork forests, olive trees, golden wheat fields. There are vineyards. Towns and villages here are small. Here, we will spend three nights in an historic hotel; Portugal’s Hotel Convento de São Paulo, a monastery founded in 1182.
