Still a prawn, just miniature. Get those tiny prawns, dredge them in rice flour and spices, then deep-fry them whole – head, shell, legs, everything – getting all the flavour of the prawn in there. It’s crispy, but it still has a bit of chew from the meat. It’s like prawn popcorn; so satisfying and so addictive. I’m salivating just thinking about it.

As I stepped into the vibrant, warm atmosphere of the winery, I could already sense it was going to be a special night. The table setting was stunning, with lush flowers, vines and red grapes forming a flowing centrepiece, and the sound of laughter filling the air as guests settled in.
